I bought some really fresh tuna. I was wondering how many days I can keep it in the fridge, and still have it fresh enough to use for sashimi/sushi?

I assume the texture will change if I freeze and then thaw it, so I don’t want to do that if possible.
Does anyone know how long restaurants keep their fish to use for sushi?

Please don’t use fish bought from the market to make sushi, it is dangerous. Sushi grade fish is notches fresher than the fish at the local market. Sushi grade fish undergoes a special flash freeze process that kills any harmful organisms living in the meat of fish.
