Freshwater Gars are cool fish but only eat live food. You will want to check out diets of different fish to see if you can supply what they need.
Many of the big species are live meat eaters.

Koi get pretty big and so do Gold Fish, They grow when they have room to do so,

Oscars only grow to about 12 to 14 inches.

Most big fish are easy to keep, if you have a really huge tank or pond for them. For an 18-inch fish, I’d say you’d need at least a 500-gallon tank. They are sometimes kept in smaller tanks (200 to 300 gallons), but the maintenance is more difficult and the fish is more stressed in such cramped quarters.

Here are a few fish in the size range you stated. Please read up on care of the individual species before you get one.
    Giant Gourami (Osphronemus goramy)
    Managuense (Paratheraps managuense)
    Wolf Cichlid (Paratheraps dovii)
    Peacock Bass (Cichla species)
Giant African Yellowbelly Cichlid (Boulengerochromis microlepis)
    Channel Catfish (Ictalurus punctatus)
Clown knife fish (Chitala or Notopterus chitala)
    Electric Catfish (Malapterurus electricus)
    Asian Arowana (Scleropages formosus)
    Silver arowana (Osteoglossum bicirrhosum)
    Red Snakehead (Channa micropeltes)
    Walking Catfish (Clarias batrachus)
    Koi (Cyprinus carpio)

Some of these fishes can get even bigger than 18 inches, but if you have a really big tank (500 gallons or over) as I have recommended, it should be sufficient.

Most of these fishes are predatory, and certain ones are illegal to keep in some places, so check the local fish and game laws before you get one.
