I have a few different types of fish to choose from, and i was wondering what the best ones to steam are. I know tuna, bass, and such, but anything else? Also , just to check, you cant steam fish that been frozen, right?

Yes, you can steam fish that has been frozen. Fresh
Salmon, grouper, and other thick meated fish do best for steaming or poaching as they won’t fall apart like a thin filet will.

You can steam any fish, frozen or not, but the taste will come out different. Of course the best taste would be fresh fish.
White stripe bass is the best I found. catfhish is good too only if it is big because after steam, you need to take off all of its skin. If it is a small catfish then there is not much left to eat.
Use Chinese recipe for steam fish with ginger, green onion, soy sauce and white wine is the best.
